“Weird AL”fredo with Broccoli and Fried SPAM

With the release of “Weird Al”’s new album, Mandatory Fun, we thought we’d do up some Mandatory recipes. Today we present to you “Weird AL”fredo with fried SPAM, broccoli, and beer.

What’s with the beer and broccoli? We just like to eat a lot of broccoli and drink a lot of beer.

“Weird AL”fredo with Broccoli and Fried SPAM


While the recipe does contain SPAM, it can also be considered a vegetarian dish fit for the likes of “Weird Al” himself. SPAM is supposedly a meat product, but after opening a can of it, I’m left skeptical. It definitely isn’t food.



1/2 cup unsalted butter
1 (8 ounce) package cream cheese
1 teaspoon minced garlic
1 1/3 cups milk (fresh from a bag because Canada)
1/2 cup grated Parmesan cheese
1/8 teaspoon ground black pepper
Pinch of salt
Fettuccine noodles
Steamed broccoli


Chop up, wash, and then steam a head of broccoli with a dash of salt…


…and get your pasta started before you start on the sauce.


Slice SPAM and fry up in a pan with a bit of butter. Set aside.


While we’re on the topic of SPAM, have you ever really looked at it?


Because it ain’t pretty. See, I told you it wasn’t food. Moving on…


Place butter and garlic in a medium non-stick saucepan and melt butter over medium heat. Once melted, add the cream cheese in smaller pieces.


Stir mixture with wire whisk until smooth.


Slowly add milk, a little at a time, whisking often so you don’t end up with any lumps and it turns out like lumpy cream of mushroom soup. Augh, I hate that.


Once milk is incorporated, stir in the Parmesan, pepper, and salt.


Toss in the broccoli, stirring and breaking up the larger bits. Remove from heat when sauce reaches desired consistency. Keep in mind that the sauce will thicken rapidly, but you can thin it out with milk if needed.


Toss with hot pasta and layer pieces of SPAM on top. Serve with beer and enjoy!
